Food & Beverage Director

Position Summary:

Responsible for the management of all restaurants, bar, and event functions in the hotel while continuing efforts to deliver outstanding guest service and financial profitability. Responsible for maintaining the highest professional food quality and sanitation standards according to the following 6PM Hospitality’s Core Values, 6PM Hospitality Partners, LLC. and Hilton Standards, and local Health Department standards.

 Essential Functions:

 Strategic Planning

  • Develop and implement strategic plans to achieve business goals related to food and beverage operations.
  • Develop and implement strategies to market and promote food and beverage offerings, attract customers, and increase revenue.

Menu Planning and Development

  • Collaborate with chefs and culinary teams to create and update menus, considering market trends, customer preferences, and cost considerations.
  • Craft innovative and appealing menus with the culinary team that align with the overall culinary vision of 6PM Hospitality Partners, Ownership, and Brand. 

Quality Control

  • Ensure the highest standards of food and beverage quality, presentation, and service.
  • Assist with management of food procurement, delivery, storage, and issuing of food items
  • Ensure consistent delivery of food to the guests for event functions and restaurant outlets.

Cost Management

  • Monitor and manage food and beverage costs, including inventory control, purchasing, and budgeting, to achieve financial targets.
  • Work closely with Department Managers to complete monthly food, beverage, alcohol and china/glass/silver/linen inventory

Vendor Management

  • Establish and maintain relationships with suppliers and negotiate contracts to ensure quality products and cost-effectiveness. 
  •  Assist in ordering all beverage, alcohol, and other necessary food supplies in absence of Exec Chef, Sous Chef, Restaurant Manager, and Kitchen Manager. 

Compliance

  • Ensure compliance with health and safety regulations, food safety standards, and other relevant industry guidelines.
  • Responsible for developing property specific SOP’s, and training manuals
  • Implement safety procedures according to OSHA and 6PM Hospitality standards
  • Inspect kitchens for sanitation, cleanliness, time/temp logs, and organization of all areas (including coolers, walk in coolers, dry storage, offices, etc.)
  • Develop policies and procedures to enhance and measure quality; continually update written policies and procedures to reflect state-of-the-art techniques, equipment, and terminology.

Staff Management

  • Recruit, train, and manage a skilled and efficient food and beverage team. Provide leadership, motivation, and support to staff.
  • Perform onboarding courses to all Hotel Food & Beverage Leaders and ensure the program is consistently fresh and evolving so that Team Members feel engaged and part of the future goals
  • Assist Events/Food and Beverage departments in interviews, hiring, training, supervising, coaching, evaluating as needed to maintain service levels of all staff according to 6PM Hospitality guidelines
  • Lead, Manage, and hold Team Members accountable to the standards of employment and job performance set by the core values of 6PM Hospitality and Hilton. Discipline Team Members as needed, according to 6PM Hospitality’s policies
  • Assist Events/Food and Beverage departments to ensure proper staffing levels for maximum productivity and highest standards of quality while controlling food and payroll costs to achieve
  • Ensure all Food & Beverage department shifts are always covered, including weekends, holidays, call-ins, vacations, etc. making it fair for all Team Members and ensuring all job duties are covered

Customer Service

  • Focus on delivering exceptional customer service, addressing customer feedback, and maintaining a positive guest experience.
  • Greet all guests in a friendly, positive manner.  Ask questions of guests and make personal connections to make them feel they are welcome and valued 
  • Anticipate and meet the needs and expectations of our guests, then go one step further
  • Visit dining areas to welcome guests

Event Planning

  • Oversee the planning and execution of events, banquets, and catering services 

Financial Reporting

  • Prepare and analyze financial reports related to food and beverage operations, providing insights and recommendations for improvement.
  • Prepare necessary data for applicable parts of the budget; project annual food, labor, and other costs and monitor actual financial results; take corrective action as necessary to help assure that financial goals are met

Innovation

  • Stay updated on industry trends, new products, and innovations to continuously improve the food and beverage offerings.

Collaboration

  • Work closely with other departments, such as operations, sales, and marketing, to ensure seamless coordination and integration of food and beverage services with overall business objectives.

Other Functions

  • Assist in service, set up, and clean-up of all banquet functions, including the opening and closing of bar operations, cash handling and reporting, as well as lighting and sound equipment owned by the property
  • Maintain a working knowledge of all stations within each hotel food and beverage outlet
  • Attend bi-weekly scheduled meetings
  • Attend BEO, food and beverage staff, and management meetings
  • Maintain open lines of communication between all departments within the hotel
  • Audit and approval of bi-weekly payroll
  • Assist other departments as needed
  • Follow all 6PM Hospitality Partners LLC processes
  • Exhibit regular and recurrent attendance records
  • Other duties as requested by management

Position Requirements:

  • Minimum Knowledge:  Requires ability to interpret / extract information and / or perform arithmetic functions. Requires typing, record keeping, or word processing.  Good communication skills
  • Formal Education and Job-Related Experience:  This position requires a minimum formal education of an associate’s degree, related certificate or equivalent related experience. 10 years of job-related experience required.
  • License, Registration, and/or Certification Required: Excellent driving record, Valid driver’s license, Certified Food Manager, SERV Safe Food and Allergan, TIPS Certified. 

Work Schedule:  Work regularly requires and varies between morning, afternoon, evening, night, holiday, and weekend assignments.  Schedule varies according to business demands and needs.

Required Travel:  This is an in-person, on property position. Position does involve travel to other 6PM Hospitality Partners, LLC properties, client locations, and off-site meetings, sometimes overnight.
